Applying for a K1 Fiancee Visa in Manila would normally take 6-9 months from the USCIS to the interview at the US Embassy in Manila. With regard to proof that you would have to provide, it should be able to establish the ongoing relationship between you and your fiancee. Examples would be letters, chat logs, photos of you together, phone bills, and emails. Even receipts of money transfer would be accepted. All these make your petition stronger and increases the chances for approval.

From personal exp. It took a 10 Months in mexico but i was asked for more proof. I think pictures, plane tickets, Money you spent on her( like Tix to movies for two, or two food orders that may be from the town she or he is from), Notes that you have from her(translated and signed note from a verfied tranlator,even you can translate just print a sign that you translated to best of knowledge). If you turn in all this stuff you should get it sooner than 10 months and submit any other proof they ask for right away to lessen the time
