The safest bet is “Xin Nian Kuai Le”. Even Tibetan understands this.

gung how fat choy is what everyone knows, but it’s actually just for catonese speakers.
in mandarin, it’s gong xi fa cai, which literally means, “congratulations, may you be prosperous”
or you can also just say, “xin nian kuai le” which just means happy new year
