This recipe from Barefoot Contessa is the best I’ve ever had. Sooo moist. And don’t be thrown by the coffee in it. They won’t taste like mocha, but rather the coffee enhances the chocolate. I actually omit the walnuts and substitute Espresso powder for coffee powder for an even stronger taste.
Outrageous Brownies
1 pound unsalted butter
1 pound plus 12 ounces semisweet chocolate chips, divided
6 ounces unsweetened chocolate
6 extra-large eggs
3 tablespoons instant coffee powder
2 tablespoons real vanilla extract
2 1/4 cups sugar
1 1/4 cups all-purpose flour, divided (1 cup for batter and 1/4 cup in the chips and nuts)
1 tablespoon baking powder
1 teaspoon kosher salt
3 cups diced walnut pieces
Preheat oven to 350 degrees F. Grease and flour a 13 by 18 by 1 1/2-inch sheet pan.
Melt together the butter, 1 pound chocolate chips, and unsweetened chocolate on top of a double boiler. Cool slightly. Stir together the eggs, instant coffee, vanilla and sugar. Stir in the warm chocolate mixture and cool to room temperature.
Stir together 1 cup of the flour, baking powder and salt. Add to cooled chocolate mixture. Toss the walnuts and 12 ounces of chocolate chips with 1/4 cup flour to coat. Then add to the chocolate batter. Pour into prepared pan.
Bake for about 30 minutes, or until tester just comes out clean. Halfway through the baking, rap the pan against the oven shelf to allow air to escape from between the pan and the brownie dough. Do not over-bake! Cool thoroughly, refrigerate well and cut into squares.

Answer by beckiI found this recipe a while back and changed it up some. It has been a big hit with everyone I’ve made them for and is quite easy.
Pecan Cookies
11/2 cups chopped pecans
1 cup butter, softened and (1 Tbs.butter for cooking pecans)
1 cup packed brown sugar
1 egg yolk (yellow part of egg)
1 tsp. vanilla extract
2 cups self-rising flour
Preheat oven to 325 degrees. Place 1 Tbs. butter in baking dish with pecans and toast about 5 – 7 minutes stirring frequently. Remove from oven and set aside to cool.
Change oven setting to 375 degrees for baking the cookies.
In mixing bowl, cream together butter and brown sugar. Beat in egg yolk and vanilla. Gradually add flour.
Roll dough into 1 inch balls and then roll into toasted pecans pressing down slightly so pecans go into dough. Place on ungreased cooking sheet about 1inch apart. Bake for about 10 minutes or until edges began to brown.
Makes about 4 dozen.
***Helpful hint*** You can make up these cookies (dough form), lay them on a sheet pan and freeze them. Then remove them and place them in a freezer container with instructions on cooking time. You can take out however many you want to cook whether its 2 or 20.
