I would suggest a foreign language. Many companies look for people that can speak multiple languages.
You want to choose the foreign language combination and your minor should be in another languge, not psychology.
The two most useful languages for obtaining employment in your field are Chinese and Arabic.

Depends what you’re looking to do with your degree. Generally speaking, if you’re planning on going into consulting or foreign service a foreign language will be most useful. Most consulting companies and foreign language postings are dependent on fluency in another language.
Depending on what you want to do, languages currently in demand are Arabic, Chinese, and Spanish.
The minor in psychology may or may not be useful in terms of personal information. It’s not that useful in terms of the psychology of actors, which is something you’ll cover in your major.
