How do you switch Horse in Red Dead redemption Undead Nightmare?

Zekkit Green: How do you switch Horse in Red Dead redemption Undead Nightmare?
I downloaded the expansion today, and I first found War(the fiery horse of the apocalypse)
There is 4 horses, I then found another horse, Pestillence and I broke that horse by doing the mini game of breaking new horses.

Now Pestillence(the other apocalypse horse) is my default horse when I whistle.

How can I make War my default horse again?

I have been reading some other forums and my BF is currently playing and people who have already finished the game say you don’t get the deeds to the four horses or the 4th horse (Death) until you complete the story line of the game.

Meaning you can’t switch until you have completed it. I would still advise you to continue to break the other horses. I’m not sure that if you haven’t ridden all 4 that you get all 4 deeds. But I’m not completely sure.

To my knowledge you do not have to have 100% completion to get all of the deeds and Death.
