The LinkedIn Police will come out and arrest you.
I’m kidding, it’s not an official database, so lying on there isn’t going to get you in trouble with the law (and no decent employer gives it any more than a cursory glance before they then go officially run your REAL records in a security check). You won’t look very trustworthy, but there are no “official” consequences.
However, when they call your last company for references, they will indeed find out the truth, so… keep that in mind. I would suggest just not filling in that information instead of lying about it.

You can leave specific dates off without much issue – was that march of 1994, or August…
If you clearly change your duties, the people you worked with will know… I’m not sure there are any “laws” that you’d be violating, but is that something you’d be ok with?
If done to you – well, now you know a bit more about the character of the individual.
If done by you – well, now you know that about yourself – and so do the people that could tell the difference…
