Adamismyname: What family is considered immediate family and what is considered extended family?
I think of all parents, siblings, grandparents, aunts, uncles, and 1st cousins as immediate family and extended family I think of like parent’s cousins or 2nd or 3rd cousins. Then distant family being people I just meet at some point like a funeral who are like 2nd cousins of a grandparent.
I only see my parents, siblings, grandparents, and one aunt on a regular basis though so does that mean they are immediate family and those I only see at summer-time, aunts, uncles, cousins are the extended family?

Legally immediate family, if single are your parents and siblings. if married are your wife and kids. Extended is the rest.

In Genealogy it is DIRECT family and extended family.
Direct family are Spouse (but not their ancestors) Children, Parents, Siblings and Grandparents Grand Children.
Extended are Your Children Spouse, Siblings families , Aunts Uncles and their children
It doesn’t matter how frequently you see or do not see theses people. It is about blood line and the connection.

Immediate family are those who usually live in the home with you…. so parents & siblings or husband and children………….. everyone else is extended……………..
