What the Deuce: What country invented zucchini bread?
This may sound like a weird question but, I’m doing an international food project, and I decided to make zucchini bread. The problem is, I don’t know which country made it. I searched zucchini bread on wikipedia, and i was redirected to zucchini. According to this line from the zucchini wikipedia page, I’m guessing that it was either made in Thailand or Vietnam… “Zucchini can also be eaten raw, sliced or shredded in a cold salad, baked into a bread similar to banana bread, as well as hot and barely cooked in hot salads, as in Thai or Vietnamese recipes.” Do you agree that it was either made in Thailand or Vietnam, if not can you tell me which country invented it? Thank you.

ZUCCHINI BREAD
Quick breads (chemically leavened) which most zucchini bread recipes are, were not developed until the end of the 18th century. This took place in America, where pearlash was discovered. Pearlash is a refined form of potash, and it produces carbon dioxide gas in dough.
In American Cookery (1796 – the first American cook book) Amelia Simmons published recipes using pearlash, and we exported some 8,000 tons to Europe in 1792. (But she has no recipe specifically for zucchini bread).
Baking powder was not developed commercially until 1857 (phosphate baking powder). So the zucchini bread as we know it (a quick bread) could have been first made in America in the 18th century when housewives discovered pearlash as a chemical leavening agent.
Zucchini plants are prolific producers, so that every way it might be used was most likely explored early on.

It sounds like an American recipe. I think the “barely cooked in hot salads” part is what they meant is used in Thai or Vietnamese recipes.Answer by Kirjava
I am Thai and we basically eat rice, bread is like sweet for us.
Zucchini is not our vegetable.
