me: For a large tiered cake, how do I “cascade from top to bottom? Is there something to attach it to at the top?
How do I get the flowers to “cascade” down and around the whole cake? Are the flowers all attached to one thing to hold it in place or are the flowers stuck inside the cake with a bunch of flower spikes?

I think you’re doing it correctly with the spikes. If they don’t provide enough stability use some frosting as a glue.
Each flower is created on a separate pin or wire, so that they can be placed individually on the cake. Since each cake varies in side and shape,there is no real thing to hold them in place.
When the flowers are made, they’re made in bulk and stored in something similar to a styrofoam corkboard. This way they are all together, and backups are made in case one happens to break during mishandling.
