Ideally I’m looking for a middle of the range accommodation for a weekend.

I need 4 single beds

Ideally in one of the following areas:
Potts Point
Bondi
Surrey Hills
Darlinghurst

Any suggestions?

Do a Google search for ‘serviced apartments sydney’ and you should get plenty of links. Most of the larger complexes can make different bedding arrangements for you, just let them know what you want. A couple of mid-range companies worth following up are Quest and Medina.
