Kicked by a muse.: Caffeine in cooking ;how do I know if a process or method might degrade it?
I’m thinking of crushing 2 200mg caffeine pills & adding them to a muffin recipe,
“it’ll yield 16 muffins so it’s not too much per serving”
How much of the caffeine will degrade after baking & in the long run as well
Also is it likely to last longer In dry goods like cookies rather than muffins or cakes.

Why on earth would you want to do that? Caffeine is a VERY bitter substance. If you want to make muffins for a study group or something, try a recipe with cocoa powder, add some mini choc chips and spike with a good tablespoon of powdered espresso (sometimes not easy to find, or use starbucks via$ ), being sure to up the sugar to compensate. Otherwise just give everyone a cup of coffee or an excedrine with their muffin. (exced is 35mg per… tablet or dose, can’t remember which). Wouldn’t worry about degredation from baking. Just the taste.
